Underwater Treasures: The Aging of Wines Já Te Disse at the Bottom of the Sea

In July 2023, only 30 bottles of Já Te Disse were selected and submerged for 16 months at three different depths in the sea at Sines for underwater ageing.

The wine aged at 10 meters, 16 meters and finished aging at 8 meters, at a constant temperature of between 10ºC and 12ºC and with a pressure of around 2 bar.

The bottles were submerged by a diving team led by diver Joaquim Parrinhas and Pedro Patrício, the producer of Já Te Disse wines.

During these 16 months, changes in the aromas and flavors of each wine were noted. Greater freshness, rounder wines, less acid and with maritime sensations on the palate. These changes are caused by a very thin osmotic membrane that allows ions to pass through bi-directionally, bringing maritime characteristics to the wine.

In addition to the changes in the wine, the bottles take on an incredible marine life, attached to the glass itself, with shells, molluscs, algae, whelks and more.

The aim of this underwater ageing micro-project is to give 30 people around the world the unique experience of tasting exactly the same wine, in two bottles with different stages – Ageing in a bottle submerged 16 months at sea vs. Ageing in bottles on the surface, the classic. And all made in Portugal, between Estremoz and Sines.
